Middle Eastern Style Flatbreads

Grilled tomatoes, eggplant and chicken served on grilled flatbread with feta cheese, parsley and mint--a great appetizer or main course.
Ingredients
- 1 medium eggplant, cut into 1/3-inch thick slices
- 1/4 cup extra-virgin olive oil
- 4 Middle-Eastern style flatbreads
- Kosher salt
- Freshly ground black pepper
- 4 medium roma tomatoes
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1/2 teaspoon ground allspice
- 2 teaspoons salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound chicken tenders
- 8 ounces feta cheese
- 1 Tablespoon fresh parsley leaves, finely minced
- 1 Tablespoon fresh mint leaves, finely minced

Heat a grill to medium-high heat. Drizzle extra-virgin olive oil on eggplant slices and both sides of the flatbreads. Season eggplant with kosher salt and pepper. Place the flatbreads, eggplant, and tomatoes on the hot grill. Grill the flatbreads on one side only, for about 4 minutes. Remove from the heat. Cook the tomatoes until totally blackened, turning occasionally to cook evenly, about 5-10 minutes. Transfer the tomatoes to a small bowl and cover with plastic wrap. Once the tomatoes have cooled to a temperature at which they can handled (about 10-20 minutes) remove all of the charred skin. Dice the tomatoes. Grill the eggplant until lightly charred and tender, about 10-15 minutes, turning once. Remove from the heat. Combine cumin, coriander, allspice, salt, and pepper in a small bowl. Mix until well combined. Coat the chicken with the spice rub and place the chicken on the grill. Grill 4-5 minutes per side. Remove from the heat. Let cool for 5 minutes and cut into 1 inch long pieces. Sprinkle the feta cheese on the side of the flatbreads with the grill marks. Top with slices of grilled eggplant, diced roasted tomatoes, and chicken. Sprinkle with parsley and mint. Sprinkle a touch of salt and freshly ground pepper on each flatbread as a whole. Place the flatbreads back on the grill and cook for 3-4 minutes. Remove from the heat and serve.
