Mediterranean Kabobs

No amounts are given here; you can make up your own proportions. Chunks of chicken, bell pepper, and onion are tossed with olive oil, garlic, and oregano, then threaded on kabobs, sprinkled with lemon juice and grilled.
 

Ingredients

  • Chicken (cut into chunks)
  • Red and/or Green Bell Peppers
  • Onion
  • Olive Oil
  • Garlic, minced
  • Oregano
  • Salt/Pepper
  • Lemon, halved

Method

Cut chicken, peppers, and onion into bite-size chunks; put all in bowl. Add olive oil, garlic, oregano, salt, and pepper; mix with hands until all ingredients are covered. Slide pieces of chicken on skewers, followed by onion, and then pepper. Follow in that order until skewer is full. Sprinkle all kabobs with juice from one-half of the lemon; place on grill. When finished grilling, sprinkle other half of lemon onto cooked kabobs and serve.

 

Notes: Use Metal kabob skewers to avoid burning.
