Mayan Tacos

Onions, corn, mushrooms, and peppers add great flavor to these chicken tacos. If you are looking for a vegetarian option, substitute the chicken for tofu.
Ingredients
- 4 boneless, skinless chicken breasts, cut into small strips or chunks
- 6 cobs of corn
- 1 cup fresh baby portabella mushrooms, sliced
- 1/2 cup chopped orange and red bell pepper
- 1/2 cup sweet onion, sliced thin
- 2 cloves garlic, sliced thin
- 1 Serrano pepper, sliced very thin (optional)
- Corn tortillas
- Butter

Cut corn off cob into bowl. Mix sliced mushrooms, chopped peppers, and sliced Serrano into corn and set aside. In a large fry pan or wok, on medium heat, saute onions and garlic in 1 tbsp of butter and 1 tbsp of olive oil mixture until soft. Add cut up chicken, brown slightly and add corn mixture and mix up. Put a lid on the chicken mixture and let flavors blend, stirring occasionally. Once chicken is cooked, take the lid off to get rid of the condensation. Turn up the heat a little and stir occasionally until the corn is getting crispy and slightly browned. Cook the tortillas in butter on a flat skillet and serve as tacos.
