Mas Chicken Quesadillas

Chicken breast tenders are marinated overnight in BBQ sauce, grilled, chopped fine, sprinkled on flour tortillas along with onion, Cajun seasoning, and pepper-jack cheese, then folded and cut in wedges.
 

Ingredients

  • 1 lb. chicken tenders
  • 16 oz. bottle bbq sauce
  • 10, 10- to 12" flour tortillas
  • 1 red onion
  • 1.5 oz Grillmates cajun seasoning
  • 16 oz. shredded pepper jack cheese
  • Sour cream

Method

Marinate chicken in half of the barbecue sauce overnight. Finely dice red onion. Grill chicken on grill until done. Chop chicken into about 1/4-inch pieces. Lay tortillas on the grill to warm. Pour barbecue sauce in a circular pattern on each tortilla; sprinkle cheese, add chicken; sprinkle onions and Cajun seasoning. Fold over; cut into 4 wedges; serve with sour cream.

 

Notes: When adding the ingredients onto the tortilla keep in mind that you're folding it over. I use Bullseye original barbecue sauce.
