Mango Chicken Salad

Fresh mangos give this lightened up chicken salad a tropical flare.
Ingredients
- 1 1/2 pounds skinless boneless chicken breast, boiled
- 1/4 cup light mayonnaise
- 1/3 cup plain lowfat yogurt
- 5 (or more) heaping tsp curry paste
- Juice of 1/2 lime
- 1 tsp honey
- 1 tbsp chopped ginger
- 1/2 tsp salt
- 1/4 cup finely chopped red onion
- 1 firm mango, chopped
- 1/3 cup golden raisins
- 1/3 cup salted cashews, chopped

Method
While chicken is cooling, whisk together mayonnaise, yogurt, curry paste, lime juice, honey, ginger, and salt in small bowl. After chicken cools off, cube it into 1/4-1/2 inch sized pieces. Combine chicken, onion, mango, raisins in bowl. Toss with dressing. Gently stir in cashews just before serving.
Notes: For an even healthier version, substitute almond slivers for cashews.
