Lowfat Apple-Chicken Salad

Chopped cooked chicken, hard-cooked eggs, celery, green onion and apple are mixed with fat-free dressing and piled into hollowed apple halves.
 

Ingredients

  • 4 boneless, skinless chicken breasts,
  • broiled and diced into bite-sized pieces
  • 2 hard-cooked eggs, peeled and chopped
  • 1/2 cup celery, diced
  • 1/2 cup green onion, diced
  • 1 cup fat-free mayonnaise-type
  • dressing
  • 4 large apples (your choice)

Method

In a large bowl combine chicken, eggs, celery, onion and dressing. Slice apples in half horizontally and remove insides, leaving a 1/2-inch thick shell. Chop removed apple finely and add to salad mixture. Spoon salad mixture into apple shells. Chill before serving.

 

Notes: This recipe is a special treat for dieters at brunch or other meals. Serve with reduced-fat muffins.
