Lemon Roasted Chicken

This dish requires few ingredients but really makes for a flavorful main dish. Seasoning the butter and rubbing it under the skin makes all the difference.Ingredients
- 1 3-4 lb whole chicken
- 2 tbsp butter, softened
- Seasoning to taste
- Lemon zest
- Lemon, quartered

Method
Remove inside stuff from chicken and discard. Rinse and pat dry chicken then place on a baking rack in a roasting pan. Use butter and season with choice of seasonings such as, garlic salt, dried parsley, no salt seasoning and pepper. Mix well into butter, adding zest. Cut lemon quarters and place inside chicken cavity. Using hands, create space between breast meat and skin. Press butter under skin and all over bird. Place remaining butter on outside to create crunchy skin and promote browning. Do not cover. Cook in a 375 degree oven for 40 minutes, then increase heat to 450 degrees for the remaining 20 minutes. Check after 10 minutes, at 450 degrees, to see if meaty part of leg is 170 degrees. When it is, remove and let sit for 10 minutes to let juices settle. Carve breast meat and serve.
