Lemon Chicken Over Pasta

This meal is a snap to make and presents beautifully and full of flavor.
 

Ingredients

  • 4 boneless, skinless chicken cutlets
  • 1 cup Italian bread crumbs
  • Fresh parsley
  • 8-10 artichoke hearts
  • 2 tsp capers
  • 1 tbsp olive oil
  • Spoonful garlic
  • 1 box angel hair pasta
  • 1 fresh lemon, cut into decorative slices

Method

Bread chicken breasts with bread crumbs. Cook on low heat in sauce pan until cooked thoroughly. Add one lemon slice for each chicken breast. Simmer on low heat. Add a spoonful of garlic, or more to taste, a few artichoke hearts and a few spoonfuls of capers. Keep on low heat while you cook pasta. Once pasta is cooked, drain and mix butter and garlic with pasta. Add pasta to plate, and top it off with some chicken mixed with artichoke hearts, lemon, garlic and capers. Top with fresh parsley.

 

Notes: This dish is simple to cook, and is done in no time! It has that special kick for the garlic lovers, and makes a statement when it is served, just by it's looks! People will think you spent hours slaving over the stove, when you know it really only takes minutes!
