Kerry Fried Chicken

Skinless, boneless chicken breasts are pounded, dusted with flour, dipped in egg, and coated with seasoned panko bread crumbs, then skillet-fried.
Ingredients
- 1 lb. skinless, boneless Chicken Breast halves
- 3/4 C. Panko Bread Crumbs
- 1 Egg, beaten
- 1 Tbsp. Water
- 3/4 C. Flour
- 1 tsp. Salt (or to taste)
- 1 tsp. Pepper (or to taste)
- 1 Tbsp. Minced Dehydrated Onion
- 1/2 Tbsp. Garlic Salt
- 1 tsp. Paprika
- 1/2 tsp. Celery Salt
- 1/2 tsp. ground Red Pepper
- 1/4 C. Olive Oil

Cut each chicken breast half into 2 pieces. Put into plastic bag and pound with flat side of a meat mallet until very thin. Take 3 shallow dishes-- In dish one: combine flour with some of the salt and pepper; mix with fork. In dish two: combine egg and water; mix with fork and add a little of the salt and pepper. In dish three: put the panko bread crumbs and the rest of the seasonings. Mix with fork. Coat the pounded chicken breasts with Dish one mixture, dredge in Dish two mixture, and then coat well with Dish three mixture. Put into a skillet with the hot olive oil; pan fry on both sides until very golden brown and chicken is done. Drain on paper towels.
Notes: This is very good served with homemade chicken gravy.
