A simple, healthy baked chicken and tomato dish served over brown rice.
 

Ingredients

  • 1 family size pkg chicken breasts and thighs
  • 1 large tomato, diced
  • 1 large onion, diced
  • 2-3 cups tomato juice or tomato soup
  • 1 pkg brown rice
  • Lemon pepper
  • Powdered onion
  • Garlic
  • Oregano
  • Extra virgin olive oil
 
Method

Preheat oven to 350 degrees. Brush a 11 X 13 pan with olive oil and set aside. Wash chicken and pat dry. Place chicken in pan with olive oil and lightly dust with seasonings, or season to taste. Sprinkle onions and tomatoes on and around chicken, and coat all ingredients with tomato juice. Cover with foil, shiny side down, and bake 1 hour. Remove foil and bake an additional 20 minutes. While baking chicken, prepare rice according to package directions. To serve, drizzle sauce from chicken over rice, making sure to get some on the tomatoes and onions.

 

Notes: You can also serve this with salad, using the sauce for dressing; just add salad vinegar. You can use boneless skinless chicken breasts for a lighter meal.
