Jamaican Jerk Chicken

A classic Jamaican recipe--marinate chicken breasts in spices and citrus juice then grill or smoke until juicy and tender.
Ingredients
- 2 tablespoon ground allspice
- 1 tablespoon dried thyme
- 1 1/2 teaspoons cayenne pepper
- 1 1/2 teaspoons ground black pepper
- 1 1/2 teaspoons ground sage
- 3/4 teaspoon ground nutmeg
- 3/4 teaspoon ground cinnamon
- 2 tablespoons garlic powder or fresh garlic
- 1 tablespoon sugar
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup white vinegar
- 1/4 cup orange juice
- 1 lime juice
- 1 ground or chopped habanero pepper
- 3 green onions or scallions, chopped
- 1 cup chopped onion
- 4-6 chicken breasts, or equal volume of another meat

In a large bowl, combine allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder, sugar, olive oil, soy sauce, vinegar, orange juice, lime juice, habanero and onion then mix well. Add chicken breasts, cover and marinate for at least 2 hours, or longer if possible. Preheat an outdoor grill to high. Grill 6 minutes on each side or until internal temperature reaches 155 degrees.
Notes: I also cook these on my smoker, but chicken can become bitter if it is smoked directly--so coat a paper bag with nonstick spray, add chicken and staple it closed. Place bag on grill and indirectly smoke for 6 hours. Place coals, two wide and 10 long, with hickory chunks on top. Light the end coal and let it smolder to the other end. In a Weber grill, put the coals on one side, 2 wide slightly overlapping, top with hickory and light just 1 end. Put bags on the other side and position them in such a manner that they do not ignite. I have spent years researching a way to do this on a Weber Grill and think I have finally perfected the procedure.
