Italian Chicken and Vegetables


Skinless, boneless chicken breast halves are placed on foil. Italian dressing, basil and desired frozen vegetables are added, and the sealed packets are baked or grilled. Parmesan cheese is sprinkled on later.



Ingredients:

  • 2 sheets heavy-duty aluminum foil  
  • 2 boneless, skinless chicken breast halves  
  • 2/3 cup fat-free Italian dressing  
  • 1 tsp. dried basil  
  • 2 cups desired frozen vegetables  
  • 2 Tbsp. grated parmesan cheese  

Method

Preheat oven to 450 degrees or grill to medium-high. Center one chicken breast half on each sheet of aluminum foil. Pour Italian dressing over chicken; sprinkle with basil. Arrange veggies on top of the chicken. Bring up the foil sides. Double fold the top and ends to seal the packet, leaving room for heat expansion inside. Bake 20-22 minutes on a cookie sheet in the oven, or indirectly on grill rack for 12-14 minutes in covered grill. Open packet and sprinkle with parmesan cheese.
