Italian Chicken with Green Peppers

Cubes of chicken breasts are breaded with seasoned fine bread crumbs and grated cheese, then browned, and baked with tomato sauce and green pepper.
Ingredients
- 2 whole boneless, skinless chicken breasts
- 1 large egg
- 1 tbsp (low-fat) milk
- 3/4 cup Italian seasoned fine dry bread crumbs
- 1/4 cup grated Pecorino-Romano cheese
- 1 large green bell pepper, seeded and diced
- 3 cups prepared tomato sauce
- 1/4 cup + 2 tbsp light olive oil
- Cooked pasta or mashed potatoes

Pound chicken breast to 1/4-inch thickness and cut into 1 inch pieces. In a large bowl, whisk together egg and milk. Add chicken pieces and soak 2 to 3 minutes. In a large zipper-lock plastic bag, add breadcrumbs and cheese. Turn back and forth to mix thoroughly. Remove chicken from egg mixture with slotted spoon and add to bag with crumbs and cheese. Shake and turn bag to completely coat chicken pieces, and then set aside. In a large fry pan, saute green pepper in 2 tbsp olive oil over medium-high heat until it just starts to caramelize. Remove green pepper from fry pan and set aside. Add 1/4 cup olive oil to fry pan and add chicken pieces. Saute chicken over medium-high heat just to crisp on both sides, 2-3 minutes total. Chicken does not need to be completely cooked at this point, as it will be finished cooking in oven. Remove from heat. Add green pepper back to skillet and toss gently to mix. In 13 x 9 baking pan sprayed with nonstick cooking spray, place chicken mixture and spread evenly. Top chicken with tomato sauce and bake in a 350 degree oven for 30-35 minutes.
Notes: May substitute other kind of cheese, like Parmesan or Parmesano Reggiano. Serve over pasta or with garlic mashed potatoes for slightly different appeal.
