Italian Chicken Salad Sandwiches

Chicken and beans in an Italian vinaigrette fill pita bread halves in this sandwich recipe.
 

Ingredients

  • 2 15.5 oz cans Great Northern beans, drained and rinsed
  • 2 10 oz cans chunk chicken in water, drained
  • 1/2 c sliced black olives
  • 1/8 c chopped red onion
  • 1/4 c olive oil
  • 2 T lemon juice
  • 1/2 t salt
  • 1/2 t coarse black pepper
  • 1 T italian seasoning
  • 1-2 T chopped fresh parsely (optional)
  • pita bread
  • spinach

Method

In a large bowl, toss beans, chicken, olives and onion. Cover and refrigerate until chilled. In a small container combine oil, lemon juice, salt, pepper, Italian seasoning. Shake until combined. Stir dressing into salad. Cut pita bread in half. Fill with spinach and salad.

 

Notes: If you don't have Italian seasoning you can make some by mixing 3/4 t oregano, 1/2 t parsley, 1/2 t basil, 1/4 t thyme.
