Island Jerk BBQ Chicken

A tantalizing spice mix gives this grilled chicken great Caribbean flare. Sauce is sweet and just a little spicy.
Ingredients
- 1 3-4 pound chicken, cut into serving pieces
- Island Jerk seasoning: recipe follows
- BBQ sauce: recipe follows
- Island Jerk seasoning:
- 2 tbsp ground allspice
- 1 tbsp each ground cloves
- 1 tbsp ginger
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp thyme
- 1 tbsp coarse salt
- 2 tsp paprika
- 1 tsp brown or granulated sugar
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- BBQ Sauce:
- 3 tbsp ketchup
- 2 tbsp vinegar
- 1 tbsp lemon juice
- 2 tbsp Worcestershire sauce
- 4 tbsp water
- 2 tbsp unsalted butter
- 3 tbsp brown sugar
- 1 tsp salt
- 1 tsp prepared mustard
- 1 tsp chili powder
- 1 tsp paprika
- Combine all ingredients in a medium saucepan. Simmer slowly for 45 minutes to an hour. Makes about 1/2 a cup

Method
Combine all BBQ sauce ingredients in a medium saucepan. Simmer slowly 45-60 minutes to yield abut 1/2 cup. Combine Island Jerk seasoning ingredients and mix well. Rub chicken liberally with Island Jerk seasoning. Let stand in refrigerator about 1 hour. Place chicken pieces on grill about 6 inches from medium coals. Cover and cook about 40 minutes, turning occasionally. Brush chicken with BBQ sauce and grill an additional 20 minutes or until cooked through. Serve remaining sauce in a separate dish.
Notes: If the basting brush for the chicken touched the remaining sauce, make sure you bring sauce to a low simmer prior to serving to prevent illness.
