Island Chicken Wraps

These wraps are filled with a ground chicken mixture seasoned with garlic and ginger and finished with toppings with a tropical twist.
Ingredients
- Island Lettuce Wraps
- 1-1/2 pounds ground Chicken Breast
- 2 Tablespoons chopped fresh Ginger
- 1 Tablespoon chopped fresh Garlic
- 1/4 cup sesame oil
- 2 Tablespoons soy sauce
- 2 tablespoons toasted sesame oil
- 1 bunch chopped green onions
- 16 pieces green leaf or iceberg lettuce
- 1/2 fresh Pineapple, diced small
- 1/4 Cup toasted Baking Coconut
- 1 Cup canned Fruit Cocktail , well-drained
- 2 Cups fried wonton strips or crispy Chow Mein Noodles
- 1/2 cup prepared Teriyaki, Hoisin or Plum sauce

Method
Combine chicken, ginger, garlic, 1/4 cup oil, and soy sauce. Cover and chill overnight. To assemble, heat medium-size saute pan with the 2 Tablespoons of sesame oil and add the chicken mixture and green onions. Cook, stirring often to ensure chicken cooks evenly and thoroughly. Once cooked spoon chicken mixture into each of the lettuce leaves; top that with the pineapple, Fruit Cocktail, coconut, wonton strips and finish with a spoonful of the Asian sauce. Roll like a taco and enjoy.
Notes: These are great for picnics too! Can be halved and used as appetizers or snacks...Yummy!
