Chicken breast halves, mushrooms, & roasted red peppers are drizzled with Dijon-style mustard & teriyaki sauce, baked, and sprinkled with Parmesan.
Preheat oven to 400 degrees and line a 9x13" baking dish or pan with foil, spray foil with non-stick spray. Measure 1/4 cup mustard in a glass cup measure, add teryiaki sauce to make 1/2 cup total. Stir to blend and pour mixture over chicken in pan. Sprinkle with mushrooms and red pepper. Bake uncovered for 25 minutes; remove from oven and sprinkle with cheese; bake for 10 more minutes or until chicken is done.
Notes:
I named this dish "International Chicken" because it uses dijon mustard from France, teriyaki sauce from Asia and Parmesan cheese from Italy. It comes together in minutes, and cleanup is a snap. Serve with rice or pasta and salad for a delicious meal. For an even quicker dinner just toast split French rolls and serve chicken breasts sandwich style.
