You don't have to be on a beach in Maine to enjoy your own clambake. Serve this baked dish with clams, chicken, and sausage over rice.
Preheat broiler for 10 minutes. In covered saucepan, simmer rice in water with salt for 5 minutes. Stir in saffron. Spread rice, undrained in bottom of 14"x9"x2 1/4" roasting pan.
Sprinkle chickens with salt and pepper. Arrange in shallow pan. Broil 9" from heat for 15 minutes on each side. Scrub clams. Cut sausage in 1" pieces.
Reset oven for 325. Top rice with chicken. Tuck clams in here and there. Scatter sausage pieces over all. Cover pan with foil. Bake 1 hour. Uncover and bake 10 minutes more.
