How To Make Restaurant Style Sweet & Sour Chicken

|Boneless, skinless chicken breast cut into 1" cubes|
|All Purpose Flour|
|Fresh Cracked Black Pepper|
|Vegetables & Pineapple:|
|Green Bell Pepper, cut in ½" pieces|
|Red Bell Pepper, cut in ½" pieces|
|Yellow Onion, cut in ½" pieces|
|Carrots, cut in thin coins|
|Pineapple Chunks In Juice, drained|
|to||Make Sweet & Sour Sauce:|
|Reserved Pineapple Juice|
|Fresh Squeezed Lemon Juice|
|Red Wine Vinegar|
|Corn Starch, rounded|
|Red Food Coloring or To Desired Color, for sweet and sour sauce|
PREPARE THE SWEET AND SOUR SAUCE:
Into the corn starch we're going to pour a little water, maybe a Tablespoon, and make a slurry mix of the corn starch. In a sauce pan we're going to add our water, pineapple juice, and then heat over high heat and slowly add the sugar and red wine vinegar, the lemon juice and the slurry. Continue to stir this you will see, as it heats up, its going to start taking on the consistency of sweet and sour sauce.
Once it's boiling add some food coloring, color to taste. Set sauce aside.
MAKE CHICKEN COATING:
In a new bowl we'll put the milk and the eggs and mix that together well.
In another bowl place the flour, ginger, garlic powder, add some freshly cracked black pepper, and mix that together and now we're ready to cook!
FRY THE CHICKEN:
First we'll prep the chicken to fry in some oil. Take some chicken, put it into the egg mixture, let it drain for a second, then drench in flour. add that to a large skillet with heated oil. I put about a half an inch of oil in this skillet. You want to cook until golden brown on one side then turn over. Once its cooked on both sides, remove to a paper towel covered plate to drain.
STIR FRY THE VEGETABLES:
We'll finish the meal in a wok. So heat some vegetable oil up and add the peppers, the onion, and the carrots. Stir fry that mixture until the onions begin to caramelize.
ADD SWEET AND SOUR SAUCE:
Add about a third of the sweet and sour sauce, stir fry that for a minute, add the chicken, add more sauce if you'd like, add the pineapple chunks, stir fry for a minute or two and you're ready to serve.
Serve this on a bed of rice, straight out of the wok. Let it cool for a minute before you eat it. Hot Sweet and Sour can cause burns in your mouth.
NOTE: This recipe works every bit as well with Shrimp or Pork. Switch to either of those meats and proceed according to recipe above. Grandpaskip
