Hot Chicken Salad

Cubed, cooked chicken is combined with celery, onion, sliced almonds, stuffing mix, and mayonnaise, then topped with potato chips and cheese, and baked.
Ingredients
- 2 cups cubed, cooked chicken
- 3 cups chopped celery
- 1/4 cup finely chopped onion
- 1 package stuffing mix (Stove Top)
- 2 Tbsp. lemon juice
- 1 cup mayo (I use light)
- 1 cup sliced almonds
- Milk or broth (enough to moisten)
- Topping:
- 1 1/2 to 2 cups crumbled potato chips (I use Baked Lays)
- 1 cup shredded cheese

Method
Mix all ingredients except for Topper. Spread in a 13 x 9 pan. Sprinkle with cheese then chips. Bake at 400 degrees until bubbly (about 30 minutes.)
Notes: Great pot luck dish; Joe's favorite!
