Ingredients:
| 2 | Sleeves of Ritz Crackers |
| 2½ cups | Chopped, cooked chicken |
| 1 can | Condensed Golden Mushroom Soup |
| 16-oz | Low-fat Plain Yogurt |
| 16-oz | Shredded Light Mozzarella Cheese |
Directions:
Crush crackers; set aside. In a bowl, combine remaining ingredients. Place about 1/3 of the cracker crumbs in a deep casserole dish sprayed with nonstick spray. Add about 1/2 of chicken mixture, then top with another 1/3 of cracker crumbs. Add remaining chicken mixture and top with remaining cracker crumbs. Bake at 350 about 45-60 minutes until heated through.
Helpful Tips:
If you're not concerned about calories, melt one stick of butter and mix it into the cracker crumbs; substitute sour cream for the yogurt, and use regular mozzarella instead of the light cheese. You can also add a vegetable to the chicken mixture, such as lightly steamed broccoli or cauliflower, to create a complete meal in a dish.
