Honey-Orange Chicken

Tender chicken that been marinated and basted with a savory sweet and sour glaze that is served with a fruit rice.
 

Ingredients

  • 3/4 C orange juice
  • 3/4 C honey
  • 3 TBSP soy sauce
  • 3 cloves of garlic
  • 1 TBSP cider vinegar
  • 3 game hens (4 3/4lbs. total), cut in half lengthwise

Method

1. In large re-sealable plastic bag, combine juice, honey, soy sauce, garlic, and vinegar. Add hens, reseal and shake to combine. Place in refrigerator 3 hrs or overnight. 2. Heat oven to 400F for 20 min. While hens are cooking, bring marinade to boiling. Boil 10 min. until slightly syrupy. Brush hens with some honey-orange syrup. Return hens to oven; roast 10 min. longer or until instant-read thermometer registers 160F. If desired, return hens under broiler 2 min. to crisp skin. Serve over fruited wild rice. Fruited Rice: Cook 1 cup of wild rice in 2 cups of chicken broth until tender. When done stir in 2 chopped scallions and 1 can (11 oz.) drained mandarin oranges.
