Hoisin Grilled Chicken Skewers

Hoisin sauce is combined with pineapple juice to make an unbeatable glaze for these bell pepper, onion, pineapple and chicken skewers.
Ingredients
- 1 pkg boneless skinless chicken thighs
- 1 small green bell pepper
- 1 small red bell pepper
- 1 red onion
- 1 jar hoisin sauce
- Cubed pineapple, fresh or canned
- 1/4 cup pineapple juice or water
- Seasoned salt and pepper

Method
Chop the chicken thighs into one inch cubes. Chop peppers and onion into similar sized pieces. On skewers, place chicken, onion, peppers and pineapple alternately. Continue until skewers are full. Lay skewers on a tray, oil lightly with vegetable oil, then season with seasoned salt and pepper before grilling. While grilling, mix hoisin sauce with pineapple juice. When kabobs are cooked, brush with hoisin sauce.
