Low-fat chicken brats are used in this healthy soup that also contains canned beans, tomatoes, salsa, veggies and Italian seasoning.
In a large kettle, saute the onions, chunks of brats and celery in the olive oil until onions start turning lightly brown on the edges. Add garlic and simmer 1 more minute. Add the carton of chicken stock, beans, tomatoes, salsa, tomato paste, & Italian seasoning and simmer for 1 hour. Serve with crusty Italian bread.
Notes:
You can leave out the brats to make it vegetarian. Instead of plain diced tomatoes, you can add a can of flavored diced tomatoes, such as basil/garlic or other flavor you might have in the pantry.
