Hearty Bean and Brat Soup

Low-fat chicken brats are used in this healthy soup that also contains canned beans, tomatoes, salsa, veggies and Italian seasoning.
Ingredients
- 1 cup chopped onions
- 2 low-fat pre-cooked chicken Brats with skin removed, cut into small chunks
- 2 stalks celery, chopped
- 1/8 cup olive oil (2 tbsp)
- 1 teaspoon chopped garlic
- 1 carton (32 oz) low-fat lower-sodium chicken stock
- 1 can black beans (15 oz)
- 1 can pinto beans (15 oz)
- 1 can diced tomatoes (15 oz)
- 1 cup desired salsa
- 1 small can (6 oz.) tomato paste
- 1 teaspoon dried Italian seasoning

Method
In a large kettle, saute the onions, chunks of brats and celery in the olive oil until onions start turning lightly brown on the edges. Add garlic and simmer 1 more minute. Add the carton of chicken stock, beans, tomatoes, salsa, tomato paste, & Italian seasoning and simmer for 1 hour. Serve with crusty Italian bread.
Notes: You can leave out the brats to make it vegetarian. Instead of plain diced tomatoes, you can add a can of flavored diced tomatoes, such as basil/garlic or other flavor you might have in the pantry.
