Ingredients:
| ½ cup | Chopped Scallions, divided |
| ½ cup | Chopped Celery |
| 1 Tbsp | Olive Oil |
| 1½ lbs | Skinless, boneless chicken breasts, cooked and cubed |
| ½ lb sliced | Cremini Mushrooms |
| 1½ cups | Cooked Brown Rice |
| 1 cup | Cooked Wild Rice |
| ½ cup | Dry Red Wine |
| 1 cup | Low Fat Sour Cream |
| 1 tsp | Curry Powder |
| ½ tsp | Salt |
| ¼ tsp | White Pepper |
Directions:
Preheat oven to 350 Degrees. Spray a 9x9" baking dish with nonstick cooking spray. Reserve 2 tbsp scallions for garnish. Saute remaining scallions and celery in olive oil, over medium heat 3-4 minutes. Add mushrooms and cook until tender.
Mix sauted ingredients with all other ingredients in large bowl. Pour into baking dish and cover. Bake for 30 minutes.
Remove cover and bake 15-20 minutes more. Let stand about 10 minutes before serving. Garnish with reserved scallions.
Helpful Tips:
This healthy combination uses cooked chicken, brown rice and wild rice. Add some of your favorite red wine and some curry for a kick, which marries well with the nutty flavors of the rice.
