Healthy Gourmet Chicken Casserole

Cubes of cooked chicken breast are combined with cooked brown and wild rice, sour cream & red wine, and seasoned with curry powder.

Ingredients:

½ cup Chopped Scallions, divided
½ cup Chopped Celery
1 Tbsp Olive Oil
1½ lbs Skinless, boneless chicken breasts, cooked and cubed
½ lb sliced Cremini Mushrooms
1½ cups Cooked Brown Rice
1 cup Cooked Wild Rice
½ cup Dry Red Wine
1 cup Low Fat Sour Cream
1 tsp Curry Powder
½ tsp Salt
¼ tsp White Pepper

Directions:

Preheat oven to 350 Degrees. Spray a 9x9" baking dish with nonstick cooking spray. Reserve 2 tbsp scallions for garnish. Saute remaining scallions and celery in olive oil, over medium heat 3-4 minutes. Add mushrooms and cook until tender.

Mix sauted ingredients with all other ingredients in large bowl. Pour into baking dish and cover. Bake for 30 minutes.

Remove cover and bake 15-20 minutes more. Let stand about 10 minutes before serving. Garnish with reserved scallions.

Helpful Tips:

This healthy combination uses cooked chicken, brown rice and wild rice. Add some of your favorite red wine and some curry for a kick, which marries well with the nutty flavors of the rice.
