Pounded chicken breasts--filled with havarti cheese--are rolled up, wrapped in bacon, topped with pesto, and baked in a spaghetti-shrimp sauce.
Preheat oven to 350. Pour Spaghetti sauce in a shallow baking dish. Toss the shrimp in and stir until they are coated with sauce.
Pound Chicken breasts to an even 1/4-inch thickness. Rub Italian Seasoning on both sides of all four breasts. Lay chicken flat and put a couple pieces of Havarti cheese on each breast. Roll the chicken up; wrap a piece of bacon around each breast and secure with a toothpick. Place each piece in the baking dish. Put a teaspoon of pesto sauce on top of each chicken roll and sprinkle with Parmesan Cheese. Bake at 350 about 30 minutes, or until chicken is done.
Notes:
This dish goes great with pasta and a salad with balsamic dressing!
