Grilllee Chicken Salad Cups with Meyer Lemon Dressing

Organic chicken breasts are seasoned with rosemary, salt and pepper, and grilled. After cooking, the chicken is chopped and combined with mayonnaise, lemon juice and peel, cilantro, golden raisins and basil, and spooned into radicchio cups. They may be eaten with a fork or out-of-hand.
Ingredients
- Organic chicken Breasts 3
- Olive oil 2 tbsp.
- Rosemary, chopped 2 tsp.
- Sea salt 1/2 tsp.
- Cracked pepper 1 tsp.
- Low-Fat mayonnaise 4 tbsp.
- Dijon-style mustard 1/4 tsp.
- Meyer lemon juice 1 tsp.
- Minced lemon zest 2 tsp.
- Cilantro, chopped 2 tsp.
- Golden raisins 1 tsp.
- Fresh basil, chopped 2 tsp.
- Radicchio cups 4 full leaves

Heat a gas grill to HIGH heat, and oil the grate generously. Rub the chicken breasts with 1 tbsp. of the olive oil, the rosemary, sea salt and cracked pepper. Cook on the grill for 10-14 minutes, turning 2-3 times until chicken is cooked through and firm to the touch. Let cool completely in the refrigerator. When chicken is completely cool, dice very finely and place in a small bowl, along with the next 7 ingredients and the remaining olive oil. Mix together well and scoop into 4 radicchio leaves. Serve with forks or these salad cups can be eaten as a hand held snack.
Notes: This is another quick and tasty recipe for you. It's also low in sodium and fat.
