Grilled Herb Chicken and Shrimp with Veggies


Chicken cubes and cleaned shrimp are marinated in a mixture of olive oil, lemon juice, herbs and mustards, then grilled on skewers with vegetables.



Ingredients:

  • 3 cloves of garlic, minced
  • 1 medium yellow onion
  • 1/4 cup minced parsley
  • 1/4 cup minced basil
  • 1 teaspoon dry mustard
  • 2 teaspoons dijon mustard
  • 2 teaspoons kosher salt
  • 1/2 teaspoons ground black pepper
  • 1/2 cup olive oil
  • 1 lemon, juiced (about 3 Tbsp)
  • 1 pound large shrimp, peeled and deveined
  • 1 pound of skinless, boneless chicken, cut into 2-inch pieces
  • Red peper, onion, mushrooms & broccoli, cut into pieces

Method

Combine the first 10 ingredients and pour over chicken and shrimp; let marinate for 1/2 hour at room temperature, or cover and refrigerate up to 2 days. Drain off marinade. Cut up vegetables; skewer the chicken, shrimp, and vegetables, and place on the grill about 1 1/2 to 2 minutes on every side.

Notes: I marinate the chicken and shrimp separately.
