
Chicken breasts, sweet peppers and onion are sliced and marinated in a mixture of oil, cumin, Cajun seasoning and vinegar. They are then grilled on a vegetable tray and served to fill flour tortillas.
Put all ingredients in a ziplock bag and shake to mix and coat. Let marinade for 2+ hours in refrigerator.
Heat a non-stick BBQ vegetable grilling tray on grill. With tongs place marinated chicken mix onto grill. Turn to grill and cook till chicken is done. Serve with flour tortillas, guacamole, grated cheese, and fresh salsa.
