Grilled Spanakopita Chicken Breast

An elegant dish, but so easy to prepare--just stuff chicken breasts with a mixture of cheese and spinach, top with herbs and grill.
Ingredients
- 4 boneless skinless chicken breast
- 1 medium box frozen spinach
- 1 cup feta cheese
- 1 cup Monterey Jack cheese
- Oregano to taste
- Salt to taste
- Onion powder to taste
- Garlic powder to taste
- Black pepper to taste
- Paprika to taste
- Parsley to taste

Method
Take unfrozen chicken breast and on one end insert a small paring knife into middle of breast. Make sure to use one that is long enough to reach at least three quarters of the way through to the other end. Make an incision in one direction until about one half inch away from the side of the breast. Then do the same in the other direction. Squeeze out all liquid from thawed spinach. In a bowl, mix spinach, feta and monterey jack cheese. Use spinach and cheese mixture to stuff opening cut in chicken breast. Stuff about one cup of mixture into chicken breast. Secure opening closed with a toothpick. Lightly rub front and back with olive oil. Liberally add seasonings to both sides of breast. Place on very hot grill and cook about two minutes on each side, just enough to sear a bit and to seal outside of chicken. Reduce heat to medium. Remove from grill and place in aluminum foil with onions, green peppers, tomatoes and mushrooms. Put one teaspoon butter with seasonings in foil. Seal up very tightly and place back on grill over medium heat for 25-30 minutes. May be served directly from foil packets or place on plate. A great accompaniment is Greek potatoes. Baking potatoes cut into cubes with garlic powder, onion powder and parsley with butter wrapped in aluminum foil placed on grill. Cooks about the same time as chicken.
Notes: Your friends and family will be amazed when you serve them something so different from the grill.
