Grilled Diavolo Chicken

Apple cider an honey give this grilled chicken a sweet flavor while the chipotle in the marinade balances the flavors out with a little heat.
Ingredients
- 1 cup apple cider
- 1/3 cup apple cider vinegar
- 2 tbsp honey
- 1/4 tsp ground red chipotle powder
- 2 tbsp Dijon mustard
- 1 small garlic clove, minced
- 1/4 tsp salt
- 1/4 tsp coarsely ground white pepper
- 2 whole chicken breasts, split in half

Method
In a large bowl combine all ingredients except chicken. Whisk thoroughly and let mixture sit for a few minutes to allow flavors to blend well. Add chicken, cover and let marinate 1/2 hour in refrigerator before grilling. Prepare grill and allow coals to settle until they are at glowing stage or medium hot. Place chicken on grill saving marinade. Turn after 10 minutes on each side, basting frequently.
Notes: Be careful not to over use chipotle, it is surprisingly hot.
