Grilled Chicken with Tequila Jalapeno Sauce

Chicken breasts are marinated in a seasoned mixture with lime juice and cilantro, grilled, and served with a sauce of tomatoes, jalapenos & tequila.
Ingredients
- Marinade:
- 1/2 cup fresh lime juice
- 2 garlic cloves, minced
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon salt
- Ground pepper to taste
- 1/2 cup extra-virgin olive oil
- 4 tablespoons (1/4 cup) chopped fresh cilantro
- 6 boneless skinless chicken breast halves

- Jalapeno Sauce:
- 6 fresh tomatoes, peeled and quartered
- 4 jalapeno peppers, seeded and finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup white vinegar
- 1/4 cup fresh lime juice
- 1 tablespoon sugar
- 1 tablespoon extra-virgin olive oil
- 3 tablespoons fresh chopped cilantro
- 1/4 cup tequila
- Salt and freshly ground pepper to taste

For marinade: Whisk together lime juice, garlic, red pepper flakes, salt and pepper. Add oil in a slow stream, whisking well. Whisk in cilantro. Place chicken in a shallow baking dish; pour marinade over chicken. Let set for 20 minutes, turning once. Jalapeno Sauce: In a blender, or food processor, finely chop tomatoes; pour into a medium mixing bowl. Stir in remaining sauce ingredients. Whisk until blended well and set aside. Chicken: Heat grill to medium-high. Brush grill with olive oil. Remove chicken from dish. Grill 8-10 minutes on each side, or until done. Remove from grill. Place chicken on a platter and drizzle Jalapeno Sauce over chicken.
Notes: It's nice to have that little something different, which takes me only about thirty minutes to prepare.
