Green Chili Chicken Enchiladas

This quick and easy dinner is made with chicken, sour cream, cream of chicken soup, tortillas and cheese.

  • Servings: 10

Ingredients:

6 Boneless, skinless chicken breats
1× 12 oz Sour Cream
1× 12 oz can Cream of Chicken Soup
½ lb Cheddar Cheese Grated
White Corn Tortillas
2× 4 oz cans Green Chilies
1 White Onion Finely Chopped
Salt, garlic powder, pepper to taste

Directions:

Dice chicken breasts and fry with salt, pepper, garlic, and onion. In large bowl mix sour cream, green chilis and soup (DO NOT ADD WATER). Add chicken breasts with juices to mixture. Mix well. Place 1-2 spoonfulls of chicken on each corn tortilla and roll up. Place corn tortillas in a baking dish. Top with cheese and bake at 375 degrees about 10 minutes or until cheese is melted. Let stand 5 minutes and serve.
