Greek-ish Chicken Breast with Flavored Rice

The combination of herbs sprinkled on the chicken gives it the Greek-style flavor. Serve with rice cooked in your favorite condensed soup.
 

Ingredients

  • 1/2 tsp Lemon-pepper seasoning (or to taste)
  • 1/8 tsp Black pepper
  • 1 pinch of salt (or to taste)
  • 1/4 tsp Oregano
  • 1/4 tsp Italian Seasoning
  • 1/8 tsp minced garlic
  • 1 skinless, boneless Chicken breast half
  • 1 can of your favorite condensed soup (cream of chicken, mushroom, or tomato work well here)
  • 2 cups instant White Rice

Method

Chicken: 1. Pre-heat oven to 375 F. 2. Sprinkle seasonings over chicken. 3. Pour about a cup of water in the bottom of a small roasting pan to keep in moisture. Add chicken 4. Cover pan, and place in the oven. 5. The chicken usually takes about an hour to cook thoroughly. Internal temp should be 170 degrees F. or, if you cut into it, the meat should be white. 6. When chicken is done, you're ready to serve!! Rice: 1. In a Medium saucepan, prepare soup as directed. Bring to a slow boil. 2. Pour in rice and remove from heat. (Stir thoroughly) 3. Cover and let stand for 5 minutes. 4. Stir before serving!!

 

Notes: Be careful not to scorch the soup. Also, when you cover the rice... DO NOT PEEK!!! The steam in the pot is important to letting the rice plump and not become cement
