Great Chicken Fajitas

Shredded chicken is combined with onion, multi-colored bell peppers, and canned tomatoes in a cooked mixture that's used to fill flour tortillas.
 

Ingredients

  • 1 whole chicken
  • 4 bell peppers (assorted colors, if desired)
  • 1 onion
  • 1 can (14 oz.) of diced tomatoes
  • Olive oil
  • Salt (to taste)
  • Sour cream
  • Flour tortillas

Method

Boil the chicken until it practically falls off the bone, and let it cool so you can shred it. Dice the peppers and onions and put them in a medium frying pan with a little bit of olive oil; fry them until the onions are kind of see through. In a deep frying pan add the chicken, onions and peppers, the can of diced tomatoes, salt and 1 cup of water. Let it boil down until there is only a little bit of juice. Warm the tortillas, spread a little sour cream on them, and add the fajita mix, fold and serve.

 

Notes: For the 4 bell peppers you may use 1 each of green, yellow, orange, and red for color.
