Granny's Zesty Chicken & Rice Soup

Cubed, cooked chicken and ranch-style beans are added to rice, tomatoes, carrots and green onion in this soup, flavored with picante sauce and basil.
 

Ingredients

  • 1 diced small onion
  • 1 cup celery
  • 2 garlic cloves, minced
  • 1 tablespoon oil
  • 2 14 oz cans chicken broth
  • 1 14 1/2 oz can undrained, diced tomatoes
  • 1 cup carrots
  • 1/2 cup rice
  • 1/2 cup picante sauce
  • 2 teaspoons basil
  • 1/4 cup chopped green onions
  • 1/4 cup fresh parsley
  • 3 cups cubed cooked chicken
  • 1 26 oz can ranch-style beans

Method

Saute onion, celery and garlic in oil until tender. Meanwhile, cover carrots, rice, picante sauce, basil, and green onions with water, bring to a boil, then simmer for 15 minutes. Add onion and celery mixture to large pot with rice mixture. Add remaining ingredients and heat to boiling.

 

Notes: This is one of my kids' favorite soups on cold days.
