Golden Roasted Chicken & Vegtables

A large chicken is roasted with onions, asparagus, eggplant and carrots, and flavored with roasemary & roasted garlic.
Ingredients
- 6-lb whole roasting chicken (or capon)
- 3-tsp each salt and black pepper (or to taste)
- 3-tsp rosemary
- 1-lb white onions, sliced thick
- 1-lb asparagus
- 1-lb eggplant, sliced thin
- 1-lb carrots, cut in chunks
- 1-head of fresh garlic, top trimmed off
- 1/2 cup canola oil

Preheat oven to 350 degrees. In a roasting pan, add the chicken; rub the salt, black pepper and rosemary all over it. Bake 1 hour; add onions, asparagus, eggplant, carrots and the garlic to the pan. Drizzle the oil all over the vegetables and chicken. Bake 1 more hour. Take out the garlic and, using a cloth, squeeze the pulp all over the top of the chicken.
Notes: This is so delicious your mouth will water; try it and you'll eat well.
