Garlic Herb Chicken

Lots of garlic flavors the chicken in this recipe. Oregano and basil round out the flavor.
 

Ingredients

  • 1 T olive oil
  • 4 boneless, skinless chicken breasts 1/4 t salt
  • 1/4 t pepper
  • 15 garlic cloves - diced or pressed
  • 1 c chicken broth & 2 T chicken broth 1 T lemon juice
  • 1 t dried basil
  • 1/2 t dried oregano
  • 2 t flour

Method

In a large skillet heat oil over a medium-high heat. Rinse chicken and pat dry. Place chicken in skillet and add salt, pepper, and garlic cloves. Cook chicken on each side until brown. Add 1 c chicken broth, lemon juice, basil, and oregano. Cover and simmer for 8 to 10 minutes or until chicken is no longer pink. Remove chicken and place on platter. In a small bowl, mix flour and 2 T chicken broth and add this mixture to the pan juices. Bring to a boil and cook and stir until well mixed. Remove mixture from skillet and pour over chicken.
