Fried Turkey Tacos

Turkey patties are cooked and placed on corn tortillas, then fried in a little margarine and served with assorted taco fillings.
 

Ingredients

  • 6 turkey patties
  • 12 white or yellow corn tortillas
  • Margarine for frying
  • Fillings:
  • 1-2 cups grated cheese of choice
  • 1/2 cup broccoli slaw
  • Sliced black olives
  • Fresh chopped cilantro (about 1/2 cup) 1/2 cup chopped red onion
  • 3 limes, cut into wedges
  • 1 jar of lime & cilantro salsa
  • 1/2 cup chopped plum tomatoes (Italian or Roma)

Method

Cook the Turkey patties in a skillet with a bit of margarine just until done; do not over cook. Cut them in half. Place one half-patty on a Corn Tortilla, and fold tortilla in half. Fry in margarine on both sides until tortilla holds its shape. Remove and drain. Repeat with remaining. Set on a platter and serve with the fillings.

 

Notes: To make a complete meal serve with chips & salsa, refried beans and cheaters Spanish rice: For Rice-- Add a jar of regular chunky salsa (plus water or chicken broth to equal the amount of liquid called for) to the rice before cooking. Cook as usual. For the Beans-- Combine 1-2 cans of favorite refried beans in a micro-safe bowl along with 1 1/2 cups mozzarella or jack cheese shreds. Microwave on high about 3 mins. and stir, continue heating until cheese is melted and beans are hot & smooth.
