Fried Chicken with Mondo Mayo BBQ Sauce

Boneless, skinless chicken breasts are marinated in a spicy herb mix, then fried until crisp and served with a creamy mayonnaise based sauce.
Ingredients
- Boneless chicken breasts, cut lengthwise, twice and halved
- 3 eggs, beaten
- 1/4 cup brewed coffee
- 1/4 cup hot sauce
- 2 cups flour
- 1 tbsp chili powder
- 1 tbsp minced onion
- 1 tbsp crushed red pepper
- 2 tbsp house herb seasoning
- 2 tbsp paprika
- 1 tbsp cumin
- Oil
- Mondo Mayo BBQ Sauce:
- 3 cups mayonnaise
- 1/4 cup vinegar
- 1/4 cup corn syrup
- 2 tbsp horseradish
- 2 tbsp hot sauce
- 2 tsp black pepper
- 2 tsp dried red peppers
- 2 tsp chili powder
- 2 tsp cumin

Method
Beat eggs and hot sauce together. Add chicken to egg mixture and let marinate 20 minutes. Combine flour with herbs and spices then whisk together. Fill a large fry pan, or deep fryer half full with oil and heat to 375 degrees. Remove chicken from egg mixture and add to flour mixture. Use a large bowl or brown paper bag to coat each piece of chicken. Place chicken in pan and fry on each side for 2-3 minutes. Turn and fry other side. Cover chicken with barbeque sauce and serve. To prepare sauce, simply stir to combine all ingredients.
Notes: Sauce can be prepared ahead of time or during the marinating time for chicken.
