Foolproof Baked Apricot Chicken

This easy chicken goes together in a flash. Just combine soup mix with spreadable fruit and mayonnaise, pour over chicken and bake.
 

Ingredients

  • 1 pkg. Savory Herbs with Garlic mix
  • 1 10 oz. Jar Apricot Spreadable Fruit
  • 1/4 cup Mayonnaise
  • 2 tsp. water
  • 1 tsp. Extra-Virgin Olive Oil
  • 3 to 4 Large Skinless Chicken Breast halves with Bones

Method

Preheat oven to 425 degrees. Lightly coat a 13x9-inch baking pan with cooking spray. To make the sauce, mix the first 5 ingredients in a small mixing bowl. Place the chicken breast in a larger mixing bowl. Pour half of the sauce over the chicken and stir until well coated. Set the remaining sauce aside. Place chicken breasts in baking pan. Bake in preheated oven for 20 minutes. Pour remaining sauce over chicken and bake for another 20 minutes or until chicken tender an no longer pink (170 degrees F).
