Fiesta in a Chicken with Cilantro BBQ Sauce

If you are looking for a new chicken dish to try on the grill this summer, start here. This Mexican inspired chicken dish has lots of flavor and flair.
 

Ingredients

  • 1 5 lb fresh whole young chicken
  • 1 12 oz can ginger ale
  • 1 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 tsp ginger powder
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 red onion
  • 1/2 lime
  • Dipping sauce:
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, peeled and smashed
  • 1 tbsp chopped fresh ginger
  • 2 lbs ripe tomatoes, roughly chopped
  • 1 tsp dried oregano
  • 1 cup red wine vinegar
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1/4 cup lime juice
  • 1 tbsp cilantro, chopped
  • 1/4 tsp cinnamon

Method

Preheat grill and brush rack with olive oil. Wash chicken inside and out then pat dry. Place can of ginger ale in a beer can chicken rack and stick up the cavity of chicken. Stand chicken up. Brush with olive oil. Pour lime juice over entire chicken. Sprinkle chicken with brown sugar, salt, pepper, ginger, cilantro, and parsley. Place onion and lime into chicken cavity for flavor. Place rack with chicken on hot grill and cook for 35-40 minutes until fully cooked. Meanwhile, prepare dipping sauce. In a saucepan, on a grill top stove, combine vegetable oil, onion, garlic, ginger, tomatoes, oregano, vinegar, honey, soy sauce, lime juice, cilantro and cinnamon. Stirring occasionally, simmer over medium heat for 30 minutes until sauce thickens. Serve chicken sliced, drizzled with dipping sauce, or place a side dish of sauce near chicken. Garnish with remaining lime slices and cilantro.
