Fiesta Chicken

Serve up this zesty southern dish with chicken and stewed tomatoes topped with cilantro and cheese.
Ingredients
- 1/4 cup all purpose flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 6 skinless, boneless chicken breast halves
- 1 Tablsp vegetable oil
- 2 cans (10 oz) tomatoes with green chiles
- 4 green onions, sliced
- 1 can (2 1/4 oz) sliced, ripe, olives, drained.
- 1 package (16oz) yellow rice, cooked according to pkg. directions.
- Optional: shredded cheddar cheese, sour cream, cilantro.

Method
Combine flour, salt and pepper: roll chicken in flour mixture. Brown chicken in oil in a large skillet over medium-high heat. Add tomatoes and next 2 ingredients: Heat to boiling. Reduce heat and simmer 20 minutes or until sauce has thickened. Serve chicken mixture over yellow rice. Top with cheddar cheese, sour cream and cilantro, if desired.
