Feta Bacon Chicken

The title of this recipe says it all, this dish is a lemon marinated chicken breast stuffed with bacon and feta. Serve this dish with rice or noodles.
 

Ingredients

  • 4 boneless skinless chicken breasts
  • 4 tbsp feta cheese, crumbled
  • 4 slices crisp bacon
  • 1 lemon
  • 1 tbsp dried oregano
  • 1/4 cup + 1 tsp olive oil
  • 1/2 tsp salt

Method

Prepare marinade by juicing the lemon and combining it with 1/4 cup olive oil, oregano and salt. Pound the chicken to an even thickness and create a pocket by slicing horizontally. Stuff the chicken with 1 piece of bacon and 1 tbsp feta. Brush both sides with the marinade. Heat a large frying pan with 1 tsp oil over medium-high heat and cook chicken 7 minutes on both sides or until cooked through. When chicken is almost finished, pour in the rest of the marinade and cook till done.
