Fast and Easy Chicken Enchiladas

Tortillas are filled with chicken, onion, chilies, cheese and broth, then rolled up. They are covered in a sauce of cream of chicken, broth and cheese.
 

Ingredients

  • 4 chicken breasts
  • 1 onion
  • 1 can green chilies
  • 1 can chicken broth
  • 1 can condensed cream of chicken soup
  • 2 cups Monterey Jack cheese, shredded
  • 8 soft flour tortilla shells (large)

Method

Cook chicken breasts, cool and cut into cubes, place in large bowl. Dice onion and add to chicken cubes. Dice chilies and add to chicken and onion. Mix in 1/2 can chicken broth and 1 Cup of the Monterey Jack cheese. Stir ingredients well. Warm Tortilla shells in the microwave for 30 seconds on high. Remove and add some chicken mixture to each. Roll up and place in 9 X 13 pan sprayed with spray oil. Combine 1/2 can chicken broth, 1 can cream of chicken soup, and 1 cup of Monterey Jack cheese. Mix well and pour over rolled tortillas. Cover and bake at 300 degrees until cheese is melted and enchiladas are thoroughly warmed.
