
Tortillas are filled with chorizo, onion, chicken and cheese. They're rolled, topped with chili pepper sauce and cheese and baked.
Sauce:
Remove all seeds and stems from peppers and cover with hot water. Soak for 2 hours. Drain. Place soaked peppers, tomato juice, and minced garlic in blender. Blend until well combined. Set aside.
Filling:
Place 1 Tbsp. oil in frying pan. Add onion and Chorizo. Brown together. Drain fat. Mix in chicken and set aside.
To Prepare:
In a large skillet over low heat, combine 1 ladle of water, 1 Tablespoon vegetable oil, and 1 ladle of the chili pepper sauce. Heat together. Dip tortillas into sauce and turn to coat both sides. Add 1 tablespoon of meat filling and 1 tablesopon cheese to each; roll up. Place in rectangular glass pan, seam side down. Continue with rest of tortillas and filling. Spoon remaining sauce and cheese on top of tortillas. Bake at 350 until heated through.
Notes:
Serve tortillas with generous scoop of sour cream. These are truly excellent!
