Erin's Chicken Alfredo

Chicken breasts are covered with a mixture of alfredo sauce, cream of mushroom soup, sour cream and Velveeta cheese, sprinkled with Parmesan and baked.
 

Ingredients

  • 4 half-breasts of chicken with rib meat.
  • Extra virgin olive oil
  • 1 jar of Alfredo sauce
  • 1/2 cup of sour cream
  • 1 can cream of mushroom soup
  • 1/2 cup of Velveeta cheese
  • 1/2 cup of milk
  • 1 cup of Parmesan cheese
  • Desired pasta or mashed potatoes

Method

Wash chicken thoroughly. Place in 9-inch square cake/casserole dish. Brush lightly with oil. Set aside. Pour Alfredo sauce into a quart saucepan on LOW heat (simmer). Add sour cream, cream of mushroom soup, & Velveeta cheese. Slowly mix in milk. Cook on simmer (very low heat), until cheese is melted. Pour over chicken. Sprinkle Parmesan cheese on top to completely cover. Bake uncovered at 300 degrees for 1 hr., turning chicken every 20 minutes, until browned. Lower oven heat to 250 and cook additional 1/2 hr., or until tender and browned. Best when browned and skin is crisp.

 

Notes: Serve over Fettucinni or Penne. Great on Mashed Potatoes also. Serve with Salad, fresh frozen corn, rolls/butter, Jell-o dessert.
