A creamy, cheesy soup with chicken, corn, black beans, tomatoes and shredded tortillas--very fast and easy.
Combine first six ingredients in a large pot and heat through until simmering. Add sour cream and cheese and cook, stirring until cheese is thoroughly melted. Add shells or tortilla chips, heat and stir until they are soft.
Notes:
Serve with additional cheese or fresh cilantro as a garnish. This soup freezes very well.
