Easy Mexican Casserole

A combination of chopped, cooked chicken, shredded cheese, onion, sour cream and jalapenos is rolled up inside corn tortillas. A mixture of cream of chicken soup and light cream is spooned over before baking.
 

Ingredients

  • 8 oz. deboned, cooked, chopped chicken (about 1 1/2 cups)
  • 1/2 pound your favorite cheese, shredded
  • 3 Tbsp. diced onions
  • 1 8 oz. carton sour cream
  • 1 can drained Jalapeno peppers
  • Salt to taste
  • Corn tortillas
  • 1 can condensed cream of chicken soup
  • 1/2 cup half and half cream

Method

Combine the first 6 items; spoon onto tortillas and roll up. Place seam side down into greased baking dish. Pour a mixture of the soup and half and half over them. Bake at 325 degrees for 20 minutes.

 

Notes: This will be a family favorite!
